Slow Cooker Mexican Pot Roast Tacos

This is a great recipe for a busy day, just put it in the Slow Cooker and its all ready at the end of the day.  I really was surprised to find a Mexican Pot Roast Taco recipe in Canada, but that is where I found it.  My assignment for the Secret Recipe Club this month took me to Canada to Janes Adventures In Dinner .  Jane is a proud Canadian who began her blog while on maternity leave and has continued to chronicle her life.  Her site is dedicated to her journey enjoying the life she has been given.  I really enjoyed my visits to Janes Blog and found many recipes that I would enjoy.  Today I am sharing her Slow Cooker Mexican Pot Roast Tacos. Jane describes her recipe like this:
I've got two small roasts of beef: 1 tsp. crushed chilles, 1 (32oz) can of diced tomatoes, dash of Worcestershire, 1 heaping tsp. of dark cocoa powder, 2 T cumin, 2 T. chili powder.  Cook on high for 6.5 hours in the slow cooker and serve with very good friends, salsa, shredded cheese, rice spiked with chili powder, stir fried peppers, guacamole sour cream and homemade tortillas.

Slow Cooker Mexican Pot Roast Tacos

Ingredients
3 1/2 pound chuck roast ( I use Grass Fed)
Salt and Pepper, generous
1 tablespoon Olive Oil
1 14 oz can Fire Roasted Diced Tomatoes
1 4 ounce can Green Chiles
3 Garlic Pod, minced
1/2 teaspoon powdered Chipotle Chili Pepper
2 Tablespoon Chili Powder
1 Tablespoon Cumin
1 Tablespoons Cocoa Powder
2 cups water
Directions
Generously salt and pepper the roast on all sides
In a hot skillet pour 1 tablespoon Olive Oil, sear the roast on both sides until browned very well
Remove the roast from skillet and place it in Slow Cooker on high
In a mixing bowl, mix the tomatoes, green chiles, garlic, chipotle chili pepper, chili powder, cumin, cocoa powder and water
When the tomato and spices are mixed well pour them over the roast and cover the Slow Cooker.
Cook on high for 6 1/2 hours
Take the roast out of the remaining broth and let set on a board for 10 to 15 minutes
Shred the roast for the Tacos and use the remaining broth to drizzle over the taco
The Tacos were delicious and we really enjoyed them.

  27. What a delicious recipe! With a roast of that size, you can have flavorful meat to use in a variety of recipes. I am going to be teaching meal planning classes next month and I am going to include this recipe in my slow cooker round up.
